Spinach, Fig, and Avocado Salad With Balsamic Vinaigrette
Summer means relaxation, fresh air, light foods, brightness and color. For me, nothing quite says a summery day like a salad filled with fresh seasonal produce enjoyed under the sun. The great thing about summer salads is your freedom to mix and match and make infinite combinations. Salads also take little time to make, which means more time frolicking in the sand and swimming in the ocean.
- 3 figs
- 1/4 avocado
- 1 1/2 cups fresh spinach
- 5-6 cherry tomatoes
- 1/4 cup chickpeas
- 1/4 cup red onion, chopped
- Balsamic Vinegar
- Olive Oil
1. Put spinach on plate and top with sliced avocado, chopped tomatoes, onions, chickpeas, and figs.
2. Drizzle with balsamic vinegar and olive oil.
