#ToastTuesday Mashed Carrots With Jalapeño
Happy #ToastTuesday! Took a break from avocado and enjoyed some Mashed Carrots on Ezekiel Toast with roasted jalapeños, cherry tomatoes, cumin, caraway seeds, and micro greens! Prep: Roast carrots and jalapeño at 425 degrees Fahrenheit (with a drizzle of EVOO). Roast jalapeño for 20 minutes and carrots for 30-40 or until soft enough to mash with a fork.
