Simple Lemon Kale Salad with Avocado, Hemp Seeds, and Almonds

 

After having my blog and Instagram for a couple years now, I've noticed that people are drawn to very simple salads. I can definitely understand this — it's much easier to toss together a few ingredients when you're in a rush or feeling super hungry rather than whipping up some crazy vegan cheese dish (as yummy as they are, they're not for everyone). 

Thankfully, salads are a great way to eat healthy, and you can really load 'em up so they're filled with light ingredients that pack a punch when it comes to nutrients. This salad only takes 5 minutes to put together, and by throwing in avocado, hemp seeds, and almonds, you're getting a good combination of healthy fats and protein, which will help keep you satiated after eating it.

Ingredients (serves 1-2)

  • 4 cups kale
  • 1 tablespoon extra-virgin olive oil
  • 1/2 teaspoon sea salt
  • 1/2 avocado
  • 1 tablespoon hemp seeds
  • 1 tablespoon almonds
  • 1/2 tablespoon apple cider vinegar
  • Juice of 1/2 lemon
  • Black pepper, to taste

1. Remove stem from kale and place into a bowl. Add olive oil and sea salt, and massage leaves using your hands by rubbing leaves between your fingers to soften the fibers. This also makes your kale less bitter.

2. Dice avocado and add to bowl, along with hemp seeds and almonds. Add apple cider vinegar and lemon juice, and toss. Top with black pepper.
