Homemade Linguine with Sun-Dried Tomato Sauce, Basil, and Parmesan! My favorite new thing I learned during quarantine is how to make homemade pasta. It just tastes that much better when your pasta is a labor of love, especially when you make your own sauce!

For this sauce, I used sun-dried tomatoes and blended them up with some garlic, basil, vinegar, and crushed red pepper for a light, summery pasta sauce that feels fancy but is actually SO easy. I included all the oil in that jar, because SO MUCH FLAVOR!

Ingredients

Sun-Dried Tomato Sauce

  • 1 8 oz jar sun-dried tomatoes

  • 2 garlic cloves

  • ½ cup fresh basil

  • 1 tbsp red wine vinegar

  • 2 ½ tbsp tomato paste

  • ½ tsp crushed red pepper

  • ½ tsp salt

  • ¾ cup pasta water

1. In a food processor or blender, blend together all ingredients (except pasta water), until everything is evenly combined (should have a thick, but even pesto-like texture).

2. While your pasta is cooking, heat sauce in a pan. Reserve the pasta water, and add to pan, mixing until sauce has formed.
