Apricot and Pomegranate Overnight Oats

These overnight oats give me such Mediterranean vibes. They’re filled with dried apricot, pomegranate seeds, honey, chia seeds, flax seeds, sunflower seeds, walnuts, and a sprinkle of coconut.

Ingredients (serves 1)

Oats

  • 1/2 cup rolled oats

  • 3/4 cup non-dairy milk

  • 1 tablespoon chia seeds

  • 1 tablespoon sunflower seeds

  • 1 tablespoon flaxseed meal

  • 1 tablespoon maple syrup

  • 1 tablespoon pomegranate seeds

  • 2-3 dried apricots, chopped

Toppings

  • Dried apricot

  • Pomegranate seeds

  • Walnuts

  • Shredded coconut

  • Honey

1. Mix everything together in a jar, and refrigerate overnight. In the morning, top with your favorite toppings!
