This fall-inspired breakfast has almost a souffle-like texture. It’s sweet but loaded with protein, and it’s super easy to make! I topped it off with apples, but you can really use any fruit you want and experiment with different flavors.

Ingredients (serves 2)

  • 3 egg whites

  • 3 eggs

  • 3/4 cup oat flour

  • 1 1/2 tbsp honey

  • 1/4 tsp salt

  • 1 tsp vanilla

  • 1 tsp apple pie spice (can sub pumpkin pie spice or cinnamon)

  • 3/4 warmed milk of choice

  • Coconut oil

  • 1 apple finely chopped

1. Preheat oven to 350 F. Grease a round, medium-sized baking dish with coconut oil.

2. Whisk egg whites in a bowl until frothy. In another bowl, mix together whole eggs, oat flour, honey, salt, vanilla, and apple pie spice. Add in the warm milk and whisk. Gently fold in the egg whites and combine.

3. Pour mixture into your baking dish, and bake for about 40 minutes. Cake should be puffed up and golden and cooked through.

4. While cake is cooking, cook apples. Spray a small pan with coconut oil and add on the apples on medium-low heat along with a few more dashes of apple pie spice. Cook for about 5-6 minutes or until apples begin to get soft, stirring frequently

5. When cake is done, top with apples and a drizzle of honey and enjoy!
