Lemony Garlic Kale Salad with Apples and Almonds

I took my all time favorite lemony kale salad and added a fall twist: Massaged Lemony Garlic Kale Salad with Apples, Almonds, and Parmesan. I’m telling you, this is the THE kale salads of all kale salads — even people who say they don’t like kale like it.

The key of course is to massage it, but most of you guys who have been here for awhile know that. If you don’t know what I’m talking about, go to my story highlights on Instagram and get ready for your life to change!!

Ingredients (serves 2-3)

  • 4 cups chopped kale, massaged with olive oil & salt

  • 2 large garlic cloves (or 4 small) finely minced into a paste

  • 1 apple, finely chopped

  • 1/3 cup chopped almonds

  • 3/4 cup grated Parmesan cheese

  • Juice of 2 lemons

  • 3 tbsp apple cider vinegar

  • 1 tbsp olive oil

  • Salt and pepper to taste

1. Add kale to a bowl and massage with olive oil and salt until leaves are silky and soft.

2. Mince garlic until is extremely fine, almost like a paste. You can use some salt to help break it up. Add to the bowl along with apples and almonds.

3. Mix together lemon juice, apple cider vinegar, and olive oil. Add to the bowl, and then top with grated Parmesan.

4. Toss until everything is evenly combined, making sure the garlic is distributed throughout. Taste, and then season with salt and pepper as desired. Sometimes I’ll add more lemon if I feel like the salad needs it. Eat, and then become a kale convert.
