Cinnamon roll oatmeal mug cake topped off with chocolate chips and coconut butter drizzle. Dessert in the morning but.... better. Recipe is inspired by Erin Lives Whole, but I added in some oatmeal to make it a bit more breakfasty.

Ingredients (serves 2)

  • 1/4 cup coconut flour

  • 1/4 cup old-fashioned oats

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 2 eggs

  • 1/4 cup coconut oil, melted

  • 1/4 cup non-dairy milk of choice

  • 1 tablespoon maple syrup/coconut sugar

  • 2 tablespoons chocolate chips, divided

  • 1/2 tsp cinnamon, divided

  • 1 tablespoon coconut butter, melted

1. Mix together coconut flour, oats, baking soda, and salt in a microwave-safe mug/bowl.

2. Mix in eggs, coconut oil, milk, maple syrup/coconut sugar, 1 tablespoon chocolate chips, and 1/4 tsp cinnamon.

3. Microwave for 90 seconds to 2 minutes or until cake is cooked all the way through. Top with remaining chocolate chips and cinnamon. Drizzle on coconut butter, and enjoy warm.
