Avocado & Goat Cheese Crostini with Mint & Pomegranate! You guys know me — I HAD to include an avocado recipe this holiday season. It’s just who I am. Plus, they're full of fiber! This recipe will make all your avocado holiday dreams come true. With nearly 20 vitamins and minerals, avocados are the perfect nutrient-dense addition to your holiday recipes.

Ingredients

  • 1 baguette, cut into 1/2”-thick slices

  • ¼ cup olive oil

  • 5 oz goat cheese

  • 2-3 Hass avocados, diced

  • 1/2 cup pomegranate seeds

  • Handful of mint, chopped

1. Add olive oil to a bowl. Dip your bread slices into the olive oil, and then place them on a baking sheet. Broil on high until golden brown, about 1-2 minutes.
2. Spread the goat cheese on each crostini. Dice your avocado, and then add to the bread slices. Top with pomegranate seeds and mint. Finish off with a drizzle of olive oil and salt.
