Sliced Garden Tomatoes with Avocado and Kale Walnut Pesto
Did you know that tomatoes and avocado are a superfood combo? Eating the two together is extra healthy, as lycopene, the antioxidant in tomatoes, is absorbed FOUR times as more when eaten with a healthy fat like avocado. - 2 medium sized tomatoes
- 1/2 an avocado
- For pesto:
- 1/2 cup kale
- 1 clove of garlic
- Juce of 1 small lemon
- 2 tablespoons olive oil
- 1 1/2 tablespoons walnuts
1. Thinly slice tomatoes and place across plate. Slice your avocado length wise, then halve. Top each tomato with an avocado slice.
2. Blend kale, garlic, lemon juice, olive oil, and walnuts until smooth. Pour over tomatoes and avocado.
3. Top with hemp seeds and salt and pepper to taste.
