Summer Citrus Mint Buckwheat Noodles with Tofu

 

Buckwheat noodles, also known as soba noodles, are traditionally used in Asian cuisine. They're a great gluten-free alternative to regular noodles, and they are surprisingly full of flavor themselves. This dish is a summery twist on Asian noodles, and I happen to love its sweet and savory flavors. 

Ingredients

  • 1 cup buckwheat noodles (cooked)
  • Handful of mint leaves
  • 1/2 grapefruit
  • 1 stalk green onion
  • 1/4 of an avocado
  • 1/8 cup chopped tofu
  • 1/2 lime
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon hemp seeds

1. Cook noodles according to package. Rinse and let cool.

2. Finely chop up mint, green onion, grapefruit, avocado, and tofu. Toss with noodles.

3. Top with soy sauce, sesame oil, and lime juice. Sprinkle with hemp seeds.
