Veggie-Loaded Bagels & Oat Milk Matcha Using Kroger Simple Truth Plant-Based Products

One of my goals for 2020 is to eat even more plant-based. I’ve always gravitated towards plant-foods, but I want to up the ante this year, even if I’m not fully vegan/vegetarian. Thankfully, there are so many more plant-based products out there that are springing up — it’s amazing seeing the food industry shift in this regard!

Some of these products can end up being pricey, which can deter people from buying them, and that can be frustrating. But now places like Kroger are offering their own plant-based products, which makes it more accessible for everyone! Yay!

Kroger has just released its expansive line of Simple-Truth Plant-Based products, and I went to my local Ralph’s to check out what they had! I ended up walking out with their Simple Truth Organic Cream Cheese Alternative and their Simple Truth Oat Milk to make a plant-based breakfast. I love that plant-based eating is becoming more accessible and affordable for people, even if they’re like me and not full vegan/vegetarian themselves.

Veggie Loaded Bagel (serves 2)

  • 2 bagels of choice

  • 4 tablespoons Simple Truth Organic Cream Cheese Alternative

  • 2 green onions, thinly sliced at a diagonal

  • 1/2 tomato, cut into 1/2 inch slices

  • 1 avocado, sliced

  • Small handful of clover/alfalfa sprouts

  • Optional toppings: Everything But The Bagel Seasoning, Crushed Red Pepper, Olive Oil Drizzle, Sliced Jalapeño

1. Toast bagel to desired crispiness. Spread Simple Truth Organic Cream Cheese Alternative onto each half. Sprinkle with green onion, and top with tomato, avocado, sprouts, and any other desired toppings.

Iced Matcha Latte (serves 2)

  • 1 cup Simple Truth Oat Milk

  • 1 cup water

  • 3 tablespoons matcha

  • Ice

1. Add ice to 2 cups, about 3/4 cup full. Pour Simple Truth Oat Milk over ice.

2. In a separate cup, add water and matcha, and whisk together to get rid of any clumps. Pour over milk and ice. Stir until evenly combined.
