Peach Pie Overnight Oats

If you want to eat oatmeal on a warm, summer morning, but you don’t want hot food, try overnight oats! These creamy, fruity overnight oats will leave you feeling happy and full!

Ingredients (serves 2)

Oats

  • 1 cup oats

  • 1 cup milk of choice

  • 1 tablespoon cashew butter or other nut butter

  • 1 tablespoon chia seeds

  • 1 tablespoon coconut sugar

  • 1/4 tsp cinnamon/apple pie spice

  • 1/2 tsp vanilla

  • 1 peach, chopped

Toppings

  • 1 peach, sliced

  • 1 tablespoon chopped walnuts

  • More cinnamon/apple pie spice

1. Mix together oat ingredients in a large bowl or mason jar. Refrigerate overnight. In the morning, top with peaches, walnuts, and cinnamon.
