Cinnamon Roll Overnight Oats

I seriously CANNOT stop making overnight oats for breakfast. It’s so easy, makes for a chill morning, is perfect for when it’s warm, and it allows me to eat more plant-based breakfasts! This cinnamon roll one might be my new fave!!

Ingredients (serves 2)

Oats

  • 1 cup oats

  • 1 cup milk of choice — I used oat

  • 1 tablespoon vanilla

  • 2 tablespoons cashew butter

  • 1 tablespoon coconut or brown sugar

  • 3/4 tablespoon cinnamon

Icing

  • 1 tablespoon coconut butter, melted

1. Mix all oat ingredients together in a bowl or jar. Cover, and refrigerate overnight.

2. In the morning, melt coconut butter for icing, and drizzle over the oats, forming a swirl.
