Peanut Butter Cup Banana Bread

I am really finding my stride with this whole baking thing (and by finding my stride, I mean I’ve come up with 2 banana. bread recipes and a cookie recipe. Hey, it’s a start!!). This banana bread is the same one as my Salted Caramel Banana Bread — just replace the salted caramel with dark chocolate peanut butter cups. I used the ones from Trader Joe’s because they’re not as big as Reese’s. If you do use a larger variety, just cut them up smaller.

Ingredients (makes 1 loaf)

Banana Bread

  • 3 very ripe bananas

  • 1/4 cup almond butter

  • 2 eggs

  • 1 tablespoon vanilla

  • 1 3/4 cups almond flour

  • 1/2 cup coconut sugar

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1 cup halved small peanut butter cups, divided

1. Preheat oven to 350 F. Line a 9 x 5 in loaf pan with parchment paper.

2. In a large bowl, mash bananas with a fork. Add in the almond butter, eggs, and vanilla, and mix together until smooth.

3. In a separate medium bowl, mix together almond flour, coconut sugar, baking powder, baking soda, and salt.

4. Add the dry ingredients to wet, and stir to combine. Mix in 3/4 cup of the peanut butter cups.

5. Pour batter into the loaf pan. Bake for 25 minutes, remove from the oven, and add the remaining peanut butter cups on top. Bake for another 20 to 30 minutes until banana bread is golden on top or until a toothpick comes out clean. Let cool before slicing.
